PG: Where did you learn to cook?

AB: I’m a graduate of Worcester Vocational High School. I graduated in 1993.

How long have you been cooking?

Since I was seventeen and I’m 32 so that’s 15 years

Where did you work prior to Trumbull Bar & Grill?

I worked at Coral Seafood for about 15 years.

What kind of food do you like to cook?

My specialty is seafood. I do a lot of sautéed items, I like to make baked stuffed lobster and lobster thermodor. I also make a great a seafood gumbo soup.

What is your favorite meal?

Seafood Alf redo with shrimp, scallops & lobster tossed with spinach & sundried tomatoes

What are you favorite flavors and spices?

I use a lot of chicken base, which cuts down on the salt. I also love oregano and a Spanish spice called Adobo…and garlic.

Who is your cooking hero or idol?

Emeril Lagasse. Because he cooks with love. Every chef should cook with love and not just to take a paycheck home.

What is your greatest cooking triumph?

Just surviving in the restaurant business, but I love being at Trumbull’s. I feel the restaurant is mine. They’ve been open about 5 years and I started last November.

Do you remember the best meal you ever served?

I make a great seafood Jambalaya, and Seafood Alf redo and a beef Filet Oscar are my best meals.

What was your greatest cooking disaster?

At Coral Seafood, doing pan fried red snapper. I heated the oil up really hot, and then went to get more oil. The pan caught on fire and I put water on it by mistake.

What are three things in your home refrigerator?

Soda, milk, and ketchup

If you could invite three people to dinner, who would they be?

My father & mom & girlfriend, because they are all very special to me.

How often do you go out to eat?

Every Monday, and Sunday when I have it off.

What is your favorite restaurant?

Ciao Bella on Grove Street in Worcester.
